How can I turn my eye off will playing ?

If you have a Fly/G7 board, hold middle button for a second or two. For Speeds, I'm not sure.

actually for a G7 board you have to hold the trigger for 2 seconds. does anyone read manuals anymore?

For stock board. Tadao's hold down the "2" button.
